A healthier sweet and tasty bread. Perfect for breakfast, snack or dessert.
Preheat oven to 350 degrees F.
In a large bowl, mix together mashed sweet potatoes, coconut oil, sugar, and maple syrup.
Stir in eggs, vanilla extract, and cinnamon.
Add in flours, baking soda, and salt. Mix together until just combined.
Pour into a greased 9x5 inch baking pan.
Bake for 30 minutes or until a toothpick comes out clean when inserted. (Cooking times may vary depending on type of oven.)
* 2 cups sweet potatoes = about 3 small to medium size sweet potatoes
**Maple syrup can be used in place of sugar if desired.
