Simple Oven Roasted Potatoes

Simple oven roasted potatoes seasoned with Italian seasoning, garlic powder, and a little bit of salt and pepper.

  • 2 cups red potatoes, chopped into bite size pieces*
  • 2 cups sweet potatoes, peeled and chopped into bite size pieces
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1 pinch black pepper


  1. Preheat oven to 375 degrees F.

  2. On a large baking sheet, add red and sweet potatoes. Pour olive oil and add Italian seasoning, garlic powder, salt and pepper.

  3. Mix together so that everything is evenly coated with oil and seasonings. Make sure potatoes are evenly spread on the pan.

  4. Bake for 20-25 minutes, making sure to flip potatoes around 10 minutes into cooking. Cook until potatoes are soft when pierced and are slightly golden brown. 

  5. Enjoy!

Recipe Notes

* Feel free to use yellow potatoes or even purple potatoes too! All of them taste great in this recipe.
