Easy and healthy pancakes filled with chia seeds and sliced bananas. Sure to satisfy your pancake craving!
In a large bowl, mix together flours, salt, cinnamon, baking soda, baking powder, and sugar.
Make a well in the dry ingredients by pushing dry ingredients to sides of the bowl.
Add milk, coconut oil, egg and vanilla extract to well. Stir to combine.
Mix all wet and dry ingredients together.
Fold in sliced bananas and chia seeds.
In a pan over medium heat (careful to go any higher because pancakes will not cook as evenly), add olive oil or butter. Then pour about 1/2 cup batter.
Cook about 2 minutes per side or until pancake is fully cooked.
Remove and repeat for rest of batter. Makes about 8-10 pancakes.
