Pancakes. Who doesn’t love pancakes? They are one of my husband’s FAVORITE breakfasts. He could eat them all the time. These whole wheat pancakes, are fluffy, dense, and a bit healthier for you too. Best thing about them, you only need ONE bowl. I’m all about that easy clean up.
The whole wheat flour gives the pancakes a slightly nutty, hearty flavor. Which, in my opinion, is really good. Making these delicious hot cakes is super easy too. You mix the dry ingredients together (the flour, tiny bit of sugar, baking powder and salt). Then you make a well in the center of those ingredients by pushing the dry ingredients to the sides of the bowl. Inside the well, mix together the wet ingredients (eggs, milk, oil and vanilla extract). Once you’ve done that and mixed all the ingredients together, you are ready to cook the pancakes on the griddle or frying pan!
Griddles are so nice for pancake making because you can cook so many at one time and they all be the same color. If you’re lacking in the griddle department, like me, then any old frying pan will do. And if you’re feeling adventurous, you can try putting a cookie sheet on the burners for a DIY griddle. Can’t guarantee it’s as effective, but I have heard it actually works.
I cook them for about 2 minutes on either side until you get a beautiful golden brown color. Double or triple this recipe depending on how many people you need to feed! After they’re done cooking, serve up these yummy cakes with your favorite toppings. You can easily add blueberries, chocolate chips, bananas, cinnamon or whatever you fancy to this batter. Now you have delicious whole wheat pancakes! Who knew whole wheat pancakes could taste so good?! Enjoy with those with you love! Happy Breakfasting at any time of the day!
Whole Wheat Pancakes
Hearty and delicious pancakes that are great for breakfast!
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 2 Tbsps granulated sugar
- 1 Tbsp baking powder
- 1 Tbsp butter for cooking
- 2 eggs
- 1 cup + 2 Tbsp milk
- 1/4 cup + 2 Tbsp canola or vegetable oil
- 1 1/2 tsp pure vanilla extract
- 1/2 tsp salt
In a large bowl, mix together flours, sugar, baking powder, and salt.
Make a well by pushing dry ingredients to sides of bowl.
In the well, add eggs, milk, oil, and vanilla extract. Whisk wet ingredients together in well. (It's okay if some dry ingredients mix with the wet ingredients.)
Whisk all ingredients together until just combined.
Heat a large frying pan to medium heat. Add butter to prevent pancakes from sticking to pan.
Pour 1/2 cup pancake batter onto pan. Cook on either side for 2 minutes or until center is completely cooked.
Repeat for the rest of the batter.
Serve warm with desired toppings and enjoy!
This recipe can be easily doubled or tripled. If batter appears thick due to whole wheat flour, then add more milk.
