Summer Blackberry Apple Almond Salad

Summertime is best time for fruits. Anything berry or peach or other stone fruit is in season! Great to make not only for desserts but also for healthier things like salad. So, how about this Summer Blackberry Apple Almond Salad with blackberry vinaigrette?!

Doesn’t it just look so pretty?! Well, my friends, it also tastes good.

In season blackberries + apples + almonds + mixed greens + homemade blackberry vinaigrette = a winning salad! Not to mention great for you too!

Blackberries were on sale this week at the grocery store so we bought a couple of containers. I couldn’t think of what to make with them other than a cobbler or crisp. But I didn’t want another dessert because we’ve had a little too many sweets this week. So I thought – salad!

It’s so simple and easy to make. Made with only a few fresh ingredients. In a bowl mix together mixed greens, blackberries, sliced apples, chopped or sliced almonds (can be toasted if you have those available), and top with the blackberry vinaigrette. Boom! You’re good to go!

Now for the blackberry vinaigrette. I’m no vinaigrette connoisseur but I think this goes well with this salad. To make it, blend together a few blackberries, olive oil, vinegar, lemon juice, salt and pepper, and a touch of water and maple syrup until smooth. Add more of whatever you need to taste. Then pour, as desired, on salad.

This salad would also be great with goat cheese. We don’t have those kinds of cheeses too often in our home, but if you do, that’ll add the perfect touch to your salad. Chicken also goes lovely with this.

This could easily be made into a mason jar salad and taken with you on the go. Just mix everything in a jar and keep the vinaigrette in a separate container to add when ready to eat.

Summer Blackberry Apple Almond Salad

Simple, sweet and refreshing summer salad made with in season fruits. 

Course Salad
Prep Time 10 minutes

Ingredients

For the Salad:

  • 4 cups mixed greens
  • 6 oz fresh blackberries
  • 1/2 cup almonds, sliced or chopped
  • 1 apple, chopped into bite size pieces

For the Vinaigrette:

  • 2 Tbsps extra virgin olive oil
  • 1 Tbsp white vinegar
  • 1 tsp lemon juice
  • 3-4 blackberries
  • 1/2 tsp maple syrup
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp water

Instructions

For the Salad:

  1. Mix all salad ingredients together in a large bowl. Add vinaigrette or other desired dressing and enjoy!*

For the Vinaigrette:

  1. In a blender, blend together all ingredients until smooth.** 

  2. Serve as desired. Store in jar or air tight container in refrigerator for up to 1 week. 

Recipe Notes

*Feel free to add goat cheese, feta cheese, blue cheese or your favorite cheese to this salad. It will only add to the flavor to give it that extra yumminess! Chicken is also a great addition to this salad!

**Color of vinaigrette may vary depending on ripeness of berries and how many are used. If dressing seems thick, can add a touch more water or vinegar to help thin it out.
