These simple oven roasted potatoes are a great addition to meal or to bring to a potluck. Just a few easy ingredients and voila, you have deliciousness!
You can make these with sweet potatoes, red beef potatoes or golden/yellow potatoes. They all work really well in this recipe. One of my husband’s favorite food combinations is meat and potatoes. So… we’ve had this as a side dish several times. And my little one loves these too! Super kid friendly! Just the other night at dinner he devoured his plate with chicken, potatoes, and a very small touch of brussel sprouts.
It’s just a few simple ingredients that you probably already have in your pantry. Potatoes, extra virgin olive oil, italian seasoning/herb salt, garlic powder (optional), and salt is all you need. If you’ve never had herb salt, you NEED to try it. It’s AMAZING. Herb salt is made with fresh herbs, salt, and garlic. Then it’s dried and turned into deliciousness! It adds a load of flavor to any dish – vegetables, meats, soups, etc. Hopefully, there will be a recipe coming for that soon.
Alright, so to make these potatoes. Chop up the potatoes into bite size pieces and spread evenly on a large baking sheet.
Pour olive oil on top. Then sprinkle on salt, italian seasoning/herb salt, and garlic powder. Mix together to make sure all the potatoes are evenly coated. Bake in the oven at 375 degrees Fahrenheit for about 20 minutes or until potatoes are lightly golden brown and tender once pierced. You will want to check on these potatoes halfway into the cooking time to turn the potatoes over to ensure even cooking on all sides and to prevent sticking. Once cooked, allow to cool for a few minutes.
Then serve these up with your favorite main dish and enjoy! Super simple way to add a great side to your meal.
Simple Oven Roasted Potatoes
Simple oven roasted potatoes seasoned with Italian seasoning, garlic powder, and a little bit of salt and pepper.
- 2 cups red potatoes, chopped into bite size pieces*
- 2 cups sweet potatoes, peeled and chopped into bite size pieces
- 3 tbsp extra virgin olive oil
- 1 1/2 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1 pinch black pepper
Preheat oven to 375 degrees F.
On a large baking sheet, add red and sweet potatoes. Pour olive oil and add Italian seasoning, garlic powder, salt and pepper.
Mix together so that everything is evenly coated with oil and seasonings. Make sure potatoes are evenly spread on the pan.
Bake for 20-25 minutes, making sure to flip potatoes around 10 minutes into cooking. Cook until potatoes are soft when pierced and are slightly golden brown.
* Feel free to use yellow potatoes or even purple potatoes too! All of them taste great in this recipe.
