Sometimes you have one of those weeks where you’re tired of your everyday breakfast/morning routine and want something a little different. Well, look no further, I have an easy and simple Sausage Egg Vegetable Breakfast Bowl for you. Normally for us, the weekends are when we change up our breakfast routine but that doesn’t always happen…especially if we need to be somewhere at a certain time. So quick breakfasts are our usual go-to. But sometimes when we have just a few extra minutes in the morning, we love to make breakfast bowls. My husband LOVES these bowls.
These bowls remind me of the frozen breakfast bowls that you find in the frozen aisle at the grocery store. Except these are better. And they taste fresher! Change this breakfast bowl depending on what vegetables and meat you have on hand. We used pork sausage and italian sausage and both have turned out wonderfully. If you need to get rid of some vegetables before they go bad, throw them in. Better to eat them, than waste them. If you don’t like a particular vegetable in your fridge, add it to the mix with some cheese. You can’t go wrong.
To make these bowls, you need sausage, eggs, and your vegetables of choice. I often use onions, bell peppers and tomatoes. But if you want to add mushrooms, go for it! First, cook sausage in a large frying pan over medium heat. Remove sausage to drain excess fat. Return pan to stove and add vegetables to sausage and sauté for a few minutes. Once vegetables are soft and onions transparent, add beaten eggs. After eggs are thoroughly cooked, add cheese and stir so cheese can evenly melt in mixture. Then serve warm with a side of fresh fruit and a glass of your favorite morning beverage. Delicious comfort breakfast food in your bowl! Mmmm…!
In case you have some leftovers, they can be easily refrigerated. It also freezes very well. So if you need to double this recipe to make more for a later time, this recipe is great. Honestly, you can’t go wrong with these bowls. Super easy to make and they’re flexible to what you already have in your fridge or pantry.

Sausage Egg Vegetable Breakfast Bowl
Easy hearty breakfast bowl. Use eggs and any vegetables that you have one hand for a delicious breakfast.
- 1/2 pound ground pork sausage (or your favorite sausage)
- 1 small onion, diced
- 1 cup potato, diced
- 1 Roma tomato, diced
- 4 eggs, beaten
- 2 Tbsp olive oil (for sautéing vegetables)
- heavy pinch salt
- pinch black pepper
In a large saute pan over medium heat, add sausage. Cook until fully cooked and browned. About 10 minutes.
Remove sausage from pan to drain.
Place pan back on stove and add olive oil.
Add diced onions, potatoes and pinch of salt. Feel free to add other vegetables you may have on hand (mushrooms, bell peppers, etc.)
Sauté until onions are transparent and vegetables are tender. About 5-7 minutes.
Move vegetables to side of pan and add beaten eggs, salt and pepper. Stir eggs occasionally to ensure they are fully cooked.
Return sausage back to pan and add tomatoes and cheese.
Mix until everything is well combined.
Serve warm and enjoy!
