Pumpkin Peanut Butter Oat No Bake Bars. Umm…DELICIOUSNESS.
…we may or may not have a sweet tooth problem around here. Don’t worry, we’re trying to practice self-control. But this holiday season is making it difficult, especially since all the sweet things are on SALE! The struggle is real.
Alright, friends, these Pumpkin Peanut Butter Oat No Bake Bars are great. I am one of those who loves most things with pumpkin so I may be a bit biased. These are easy to make and are a great way to use some of the leftover canned pumpkin that you may have used in other pumpkin recipes.
My favorite thing about this recipe is that it requires no baking. Which may seem like it’s not that big of a deal, but it is when your fire alarm goes off every.time.you.turn.on.your.oven. (even though it’s only been on for 5 minutes…)
All you need for these bars is pumpkin puree, butter, milk, oats, brown sugar, peanut butter, chocolate chips, vanilla extract and ground cinnamon. In a medium sauce pan, add pumpkin puree, butter, milk and brown sugar. Bring to a rolling boil for at least 1 minute. This is important for flavor and helps with the texture. Remove from heat after a little over a minute. Add peanut butter, vanilla, and cinnamon. Stir together until peanut butter is thoroughly mixed. Add oats and stir until well combined. Fold in chocolate chips. It’s okay if they melt because the mixture is warm. The bars will still turn out great.
Line a 9″x5″ pan with parchment paper. Pour mixture evenly to the bottom. Freeze for at least 30 minutes. Remove from freezer and cut into 12 bars. Enjoy! I normally keep these in the freezer but if you plan on eating them quickly, feel free to leave them out.
Try not to eat the whole pan! These will go quickly.

Pumpkin Peanut Butter Oat No Bake Bars
Easy pumpkin peanut butter oatmeal no-bake bars that are delicious. Great as a snack or dessert.
- 5 Tbsps pumpkin puree
- 1/2 cup butter, stick
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/4 cup peanut butter
- 2 tsps pure vanilla extract
- 1/2 tsp ground cinnamon
- 3 cups Old Fashioned Rolled Oats
- 1/2 cup chocolate chips optional
In a medium sauce pan, bring pumpkin puree, butter, brown sugar, and milk to a rolling boil.
Allow to boil for at least 1 minute.
Remove from heat.
Add peanut butter, vanilla extract, and cinnamon. Stir until peanut butter is thoroughly mixed.
Add oats and stir until well combined. Add in chocolate chips.
Line a 9"x5" baking pan with parchment paper.
Pour mixture evenly into bottom of pan. Freeze for 30 minutes.
Remove and cut into 12 bars.
