Peanut Butter Chocolate Energy Bars

I had one of those days where you find your clothes in parts of your house where clothes should never be… Somehow I left my running shorts inside my pantry. I clearly know myself well. Eat and exercise, right?! I literally spent all morning trying to figure out where they were and finally just assumed that they were in with the dirty clothes. Low and behold when I get ready to make dinner and open the pantry, there they were. I guess it’s better than finding them in the fridge.

It’s obvious that my mind wasn’t thinking very clearly. It was one of those days where “you-want-chocolate-but-not-too-much-to be-uhealthy” kind of days, but in the back of your mind, you’re really thinking, “meh-who-cares-I’m-going-to-eat-all-the-chocolate-I-want-and-be-happy-about-it.” Tempting…

I ended up settling for these peanut butter chocolate energy bars.

So great and healthy for you too. Who doesn’t love the combination of peanut butter and chocolate?! They can be made without any processed ingredients or additional sugar depending on your level of “healthy” and taste for foods. I made these bars with ground oats, ground flax seed, peanut butter, vanilla extract, cocoa powder, butter and sugar. If you didn’t want the sugar in the chocolate on top, you could use coconut oil instead of butter and another natural sweetener like honey, syrup or agave for the sugar. If you don’t like chocolate, you could skip that part all together and make peanut butter bars, or you could roll the mixture up to make energy balls. Either way, be careful because these are addicting and packed with lots of protein.

Peanut Butter Chocolate Energy Bars

A simple no-bake energy bar with chocolate and peanut butter.
Prep Time 15 minutes
Cook Time 30 minutes

Ingredients

For the Oat Bar:

  • 2 cups oats, ground (grind in blender or spice grinder)
  • 1/2 cup ground flax seed
  • 1 cup peanut butter
  • 1/2 cup maple syrup
  • 1 tsp pure vanilla extract
  • 1/4 cup chocolate chips optional

For the Chocolate Layer:

  • 3/4 cup cocoa powder
  • 1/2 cup butter (1 stick)
  • 4 tbsps sugar

Instructions

For the Oat Bar:

  1. In a medium bowl, combine together ground oats, flax seed, peanut butter, maple syrup and vanilla. Make an even layer across the bottom of a 9x5in baking dish.

For the Chocolate Layer:

  1. In a medium sauce pan over medium low heat, melt butter.
  2. Add cocoa powder and sugar. Stir and cook until the mixture has a smooth texture.
  3. Pour chocolate evenly on top of oats layer.
  4. Sprinkle chocolate chips on top.
  5. Put in freezer and let set for at least 30 minutes.
  6. Remove from fridge, slice and enjoy!

Recipe Notes

*Feel free to use substitutes for the butter and sugar. You may get a slightly different texture/taste depending on what you use. So far, I've found using actual butter to give the best taste and texture.
