Mexican food is a popular cuisine in my family. We have it ALL the time, but one of our favorite dishes is Chicken Enchiladas. Now, if you’ve ever been to Mexico or had real enchiladas, these aren’t quite that but these are a “Tex-Mex” version. Still so DELICIOUS.
It’s super simple to make too! All you need is chicken, tomatoes, onion, bell pepper, tortillas and enchilada sauce. I like to make my own enchilada sauce because it tastes fresher but whatever you have on hand works great.
It’s seriously my most favorite meal ALL DAY, EVERYDAY.
These muffins are so moist and have a great balance of sweetness from the sugar and tartness from the blueberries and lemon. And they have a delicious buttery crumble that just leaves you wanting more with every bite. Plus, they’re one of my husbands favorite muffins.
I had one of those days where you find your clothes in parts of your house where clothes should never be… Somehow I left my running shorts inside my pantry. I clearly know myself well. Eat and exercise, right?! I literally spent all morning trying to figure out where they were and finally just assumed that they were in with the dirty clothes. Low and behold when I get ready to make dinner and open the pantry, there they were. I guess it’s better than finding them in the fridge.
It’s obvious that my mind wasn’t thinking very clearly. It was one of those days where “you-want-chocolate-but-not-too-much-to be-uhealthy” kind of days, but in the back of your mind, you’re really thinking, “meh-who-cares-I’m-going-to-eat-all-the-chocolate-I-want-and-be-happy-about-it.” Tempting…
I ended up settling for these peanut butter chocolate energy bars.
Sunshine + Summer + Salad = Smiles
Sunny days are the best. Except if you’re stuck inside without, at least, a window to look out. Rainy days are great and those are the perfect days for snuggles, reading a book, and cooking comfort foods. Don’t get me wrong, I definitely love those days, but sunny days during the summer are days that give you so much energy and so much joy! It’s like you want to spend as much time as possible enjoying all the sun’s rays. Yesterday was that kind of day. My little family went for a run around a park that was wonderful but it ended up not so well… Due to some faulty equipment, there were a few scrapes and scratches but overall, thankfully, everybody is okay.
Salad probably isn’t the first thing that pops into your mind after being outside all day. Let’s be real. The first things on your mind are probably either ice cream or cookies. Maybe you’re even craving some fresh fruit but not salad…at least not for me. But the hubby and I eat quite a few salads lately, and I just thought I had to share.
How about that Apple Blueberry Almond Spinach Chicken Salad??? Yessss, please. It’s so refreshing, crunchy, and satisfying. And the best thing is that it takes little time to make and you probably have these ingredients in your fridge.
Summer is already here and it’s almost July, can you believe it? It’s so hard for me to believe that June is almost over. And there’s only 6 months left until Christmas! Christmas is one of my favorite holidays. I may or may not sing Christmas music all year round…but that’s a different story. Let’s just soak up these summer days while they last.
Today I’m sharing one of my favorite dishes- Summer Fruit Salad. I love fruit so much. Whenever I see that it’s in season and on sale, I’m sure to buy it and whip up a little fruit salad. And it always hits the spot. Most of the time, I make fruit salads with strawberries, blackberries, grapes, blueberries, and peaches but this time, I found some gorgeous mangoes at the store and just had to get a few of them. Even though mangoes are so big, you don’t really get too much fruit from them because they have such a large pit.
I added peaches, grapes, blueberries and cherries to the mango to make a colorful and delicious medley. There was even a sprinkle of brown sugar on top! Mmmmm…deliciousness to my taste buds and tummy! I love making fruit salads because they are so simple and take little time to make. They’re perfect for a friend or family get together or a summer evening on the patio.
According to my husband, these sandwiches are THE BEST EVER. I’m talking about a guy who loves a good hotdog and eating sandwiches are probably close to the bottom of his list when it comes to lunch or dinner options. Anytime we buy pesto and nicer than sandwich bread, he gets excited. 🙂
Recently, a dear friend taught me how to watercolor. We watercolored many times a week and it was one of our favorite things to do! She still creates these beautiful watercolors of clouds, trees, and animals. She’s got great talent! If you’ve never watercolored, you should try it. It’s simple to do and if you mess up, which I do often, then you can dab some water on the area that you want to “erase” and wipe it with a paper towel. It’s great.
As a momma, it can be hard to find time to do crafty things, remember people’s birthdays, cook dinner, and take care of your child. I’m reminded of what it means to be selfless. Being selfless is hard work but so essential to our lives. Sometimes it’s a lot of work to go out and purchase a card because you have to get your baby ready, put him in a carseat, get to your destination, take him out of the carseat (or carry it which is heavy and you have to lug it around the store), get what you need, pay, put baby back in carseat, return home, take baby out, and continue with other tasks of the day. Why not try and make gifts? It not only saves time, stress, and money, but many people also love to receive handmade gifts. When I receive a handmade gift, it makes me feel special knowing that someone actually took the time and made the effort to do something so sweet. Handmade gifts are perfect for a large or small budget and it can mean so much to whomever receives them.
After learning how to watercolor from my friend, I was inspired to paint cards for other people or to create DIY decor for our home. It definitely doesn’t always turn out the way that I want it to. I’ve really come to enjoy it. The card pictured is made on watercolor paper. I painted a leaf wreath with a few flowers and then sketched an outline around the leaves and flowers with a fine point pen. The words were handwritten with the same pen but made to resemble calligraphy. Some of the best things about this card are that it didn’t cost $5 like normal cards do, I can write whatever message on it, and it’s handmade! Hopefully this gives you an idea of what you can do or make for others!
Happy Monday! It’s the first day of summer! That should make Monday a little brighter! I love weekends, and I have to say Sundays are my favorite day of the week. I go to church, spend time with my family and just enjoy the blessed day. Over the weekend we did some traveling. And if you have little ones (or perhaps pets), you know that’s not always easy. I cannot tell you how many times I was in the back seat of our car, while a family member was driving, reading a Dr. Seuss book over and over again just so my little guy wouldn’t lose it in the car. Good times… I’ve almost memorized that entire book now… But still, I am so thankful for that little man.
Well when we got back from traveling I noticed the avocados I had out on our table were getting a little too ripe. So this afternoon I made cheese avocado toast.
Oh, it hit the spot! Creamy and perfect for an afternoon snack. Best thing- it only took 15 minutes to make.
It’s almost summer time and all those yummy berries are coming in season! A few weeks ago, my family went to pick some strawberries. It was the first time for the littlest member of our family and my husband and they both seemed to love it! To top it off, we had some homemade strawberry ice cream to cool us down after working hard to get all those strawberries. I mean what better strawberry picking experience can you get? I love berries. But today, I’m not thinking of strawberries, I’m thinking of blueberries. I love blueberries. Definitely one of my favorite fruits (other than peaches, which I LOVE). I love yogurt… and my blender. And together we get a beautiful smoothie. They are a perfect way to get lots of nutrients and you can take them with you wherever you go.
Today I made a banana blueberry smoothie with spinach. Yes, spinach. If you’ve never tried a smoothie with spinach you ought to give it a try. First, you can’t really taste it and, second, it adds so many extra vitamins! I added a banana, some blueberries, greek yogurt, milk and spinach to my blender and gave gave it a go. Just a couple minutes later, I got myself a healthy smoothie. I eat a lot for breakfast. A lot. What would normally be okay for some is just a snack for me. So along with this smoothie, I had this with some scrambled eggs and it was lovely.
Teacher, chef, doctor, lawyer, firefighter, President, and Scientist are some popular jobs that people want to be when “they grow up”. For me, none of those jobs ever stood out to me. Sometimes, I thought “oh, being a teacher would be nice or maybe a chef would be really neat” but as I got older I knew what I wanted to be. In college I was always debating on what I should study…business, math, foreign language, nutrition, education??…you name it, I probably considered it. So, what would be the right fit for me?
