I remember when my husband and I first got married; such a wonderful time! But, I had to start learning the art of cooking for two. Sometimes while we were dating we would make a date of making a meal together. But that was just a meal and we weren’t living/eating together constantly as we are now. My husband didn’t know too much about cooking but over the years he has learned to cook and has even started to enjoy it!

Cooking for two can be so much fun too! You have someone be a taste-tester, which is personally one of my favorite jobs of all time. And if the meal turns out to be delish, then hey, you can add it to your list of things to make again! Plus you get to enjoy a meal with another person. Food tastes better when it’s eaten with others. Maybe you can even get the other person to help with the cooking!

Berry Peach Smoothie

Smoothies seem to be the new go-to for breakfasts. They are great for grab n’ go mornings. They are easy to make and you can put basically anything you want in them. And for the most part, they’re pretty healthy for you too. Well, this morning I was feeling a smoothie… so I made a berry peach smoothie. Greatest thing?! It only took 6 ingredients! I love simple and quick recipes. We had an a peach that was getting almost too ripe, so I needed to use it right away. Those peaches were from our local Farmer’s Market and you could literally taste the right-off-the-tree freshness.

Homemade Chicken Enchiladas

Mexican food is a popular cuisine in my family. We have it ALL the time, but one of our favorite dishes is Chicken Enchiladas. Now, if you’ve ever been to Mexico or had real enchiladas, these aren’t quite that but these are a “Tex-Mex” version. Still so DELICIOUS.

It’s super simple to make too! All you need is chicken, tomatoes, onion, bell pepper, tortillas and enchilada sauce. I like to make my own enchilada sauce because it tastes fresher but whatever you have on hand works great.
