Banana Berry Chia Seed Smoothie

Happy November 1st! Stores are now filling up with Christmas decorations. Aisles are filled with pumpkin, gingerbread, chocolates, peppermint and everything fit for the holiday season. I’m still over here trying to savor each bit of Fall that I can.

While savoring the fact that today is the beginning of November, I made a Banana Berry Chia Seed Smoothie. Does it speak Fall? Not quite. But it’s definitely refreshing!

I, personally, had never bought or tried chia seed before. I kept seeing post after post about chia seeds and was thinking that I needed to try it. So, after several weeks of not giving into the chia seed trend, I finally did it. Can I just tell you that those little seeds are superfoods?! They are a bit smaller than flax seed and you really can’t taste their flavor. They have lots of fiber and other great nutrients, which help to keep you (and me) fuller longer.

The leaves are finally beginning to change in my neck of the woods and it’s so beautiful. Fall is probably my favorite season of the year. With all the fall leaves, it only encourages a trip to the mountains to see the gorgeous changing of the seasons. Which, I have to admit, is one of my favorite things to do. Homemade Guacamole

Guac. Guac. Guacamole.

As you already know, I love just about anything Mexican. Guacamole is the icing on the cake for me, or should I say the guac on my taco.¬†Okay, I’m not the best pun maker so please give a little grace. ūüôā

Sometimes if you go out to eat at a local Tex-Mex or Mexican place, it costs extra for guacamole.¬†It makes you think, “is it really worth it to pay an extra $2 for this guac?”. In some cases, it most definitely is, but in others, why not just make your own! You can invite some friends or family over and have a Fiesta. Plus you can have as much guacamole as you want. Side note – If you make your own guacamole, it generally costs around $3-$4. And that’s a whole bowl of guacamole.

Guacamole is a healthy snack too. It’s made with avocados which are great superfoods. They are full of healthy fats. Avocados mixed with lots of vegetables, how can you go wrong? Fun fact, did you know that it takes an avocado tree nearly 10 years before it produces fruit?! Now, it makes sense why they are sometimes more expensive!

Chips and salsa are some of the best things about going out to a Mexican restaurant. Or wait…chips and queso are THE BEST thing about going out to Mexican restaurant. Unfortunately, I haven’t figured out how to make delicious queso dip yet. But that WILL have to happen.

Basic Homemade Granola

Happy Monday! Hope you started off your week with a delicious breakfast and a good strong cup of joe!

Today I have a Basic Homemade Granola recipe for you! It’s super easy to make. You can make it with everyday ingredients from your pantry. Can I tell you how many times I have made this granola and have failed!?! I burnt several batches and others tasted terrible.¬†But after several attempts and many days of eating burnt granola, I have finally found the key! The¬†key, my friends,¬†to good granola is LOW oven temperatures and SLOW roasting. 250F seems to be great temperature for granola making. No 425F here. Otherwise, you will end up with blackened granola, which¬†isn’t good.

Cinnamon Maple Peanut Butter Toast

Easy breakfast or pre/post workout snack made with only 4 ingredients. Perfect for a little extra protein to give a boost of energy.

Servings 2 slices of toast

Ingredients

  • 2 slices of your favorite bread toasted
  • 2 Tbsps peanut butter or other nut butter
  • 2-3 tsps maple syrup
  • 1/4 tsp ground cinnamon or more depending on how much you like cinnamon

Instructions

  1. Toast slices of bread.
  2. In a small bowl, mix together peanut butter, maple syrup, and cinnamon.
  3. Spread mixture on top of toast.
  4. Drizzle with syrup and enjoy! You can add other toppings like nuts, bananas, granola or whatever else you may have on hand.
