Breakfast all day, everyday, right?! Who doesn’t love breakfast food for any time of the day? Some breakfast food and a good cup of coffee, and I’m a happy girl.
This simple Nectarine Vanilla Maple Oatmeal is lovely for breakfast. But let’s be real, oatmeal is a great mid-day snack too. It’s heart healthy and great for on-the-go.
It still doesn’t feel quite like Fall yet, so I had to add some summer fruits in the mix. Summer fruits are definitely my favorite. But so excited for all the pumpkin, squash, and soup recipes to come!
Okay, so now for the actual recipe. You need a nectarine, pure vanilla extract, maple syrup, oats, milk (or water), and a pinch of salt. In a large mircowaveable bowl, mix together oats, milk, and vanilla extract. Follow the instructions on your oat packaging for proper cooking time and ratios. Be sure it’s a large bowl though, otherwise, your oatmeal may end up outside your bowl… This may have happened when I made this… Once cooked, stir in maple syrup and pinch of salt. Allow to cool for a couple minutes.
Here’s where you get to be creative. Add your favorite oatmeal toppings. This flavor of oatmeal is a good base for almost anything. Nuts, fruit, chocolate…you name it, and it will be delicious. If you ever have any leftover fruit that you need to use, oatmeal is a great place to use them. You can make almost any type of oatmeal you can dream of. My nectarines were getting too soft so I had to figure out what to do with them before they rotted. And oatmeal it was!
I added a drizzle of peanut butter to my bowl just for some extra flavor. But you can do whatever you like! No need to buy store bought oatmeal now that you can make your own. Hope this makes your day even better!
Nectarine Vanilla Maple Oatmeal
Simple, easy, healthier oatmeal full of fruit. Perfect for your morning routine.
- 1/2 cup Old-Fashioned rolled oats
- 1 cup milk (or water)
- 2 Tbsps maple syrup
- 1 1/2 tsps pure vanilla extract
- 1 nectarine thinly sliced
- 1/2 banana thinly sliced (optional)
- 1 Tbsp sunflower seeds or nuts (optional)
- 1/2 Tbsp peanut butter (optional)
- pinch of salt
In a large mircowaveable bowl, mix together oats, milk, and vanilla extract.
Follow cooking instructions on oat packaging for proper cook time and ratios.
Carefully remove oatmeal from microwave.
Stir in maple syrup and pinch of salt.
Top with nectarine, banana, and drizzle with peanut butter.
