This yummy Sweet Potato Breakfast Hash is finally here! It’s a great way to change up your everyday breakfast routine. Did I mention that it’s gluten, dairy, and refined sugar free?!

I’ve been meaning to post this recipe sooner but I’ve had to make some tweaks along the way. And most of the time I cook, I don’t measure. So when I decide to post something onto the blog, I try to recreate what I made measuring the ingredients that I used. Sometimes this takes a few tries. But it’s here for you now!

There are so many ways to use sweet potatoes. Here in North Carolina they are in season all year round. Sweet Potatoes are high in vitamin A, potassium, and fiber among other vitamins and minerals. They serve as a great carbohydrate alternative for those who are gluten-free. I’ve seen sweet potatoes used as pasta noodles, rice, and even toast!

To make this Sweet Potato Breakfast Hash, you’ll need sweet potatoes, bacon, onion, garlic, italian seasoning, paprika, cumin, salt, kale, tomato, water and eggs. If you’re a vegetarian, feel free to use a vegetarian friendly alternative.

Cook bacon in a large pan until desired texture. I like my bacon on the crispy side so I cook mine for a little bit longer. Remove bacon from pan. Here you have an option. You can either drain the bacon fat from the pan, wipe the pan down and use another oil of choice (i.e. avocado, coconut, EVOO, etc.) or just leave the bacon grease to cook the potatoes in. Just be careful to use a couple tablespoons and not too much more otherwise you’ll end up with a greasy dish. Then add the sweet potatoes.

You want to stir frequently to prevent the potatoes from sticking to the pan. Add in water. Not oil. Once you add in a few tablespoons of water, stir the potatoes and cover pan with a lid. This creates a steaming effect that will help to fully cook the potatoes. You can add more water as needed. Continue to stir frequently. Once the potatoes begin to soften, add in onions, and seasonings. Cook until potatoes are fully cooked and onions are transparent. Then stir in garlic.

Remove from heat and add in tomatoes, kale, and top with fried eggs.

Y’all, doing this recipe was the first time I have ever made fried/sunny side up eggs. I pretty much always eat my eggs scrambled. But there’s a first time for everything, right? Having the eggs sunny-side up over the hash creates a nice “sauce” when you break into the egg and eat it with a bite of the delicious hash. My hubby was a huge fan!

He had never grown up eating eggs like that and he thought it was so nice how changing the way you cook an egg can add so much flavor, dimension and all around goodness!

You can eat this dish as is, which is spectacular. Or you could eat it on a tortilla, add some cheese, avocado, more greens, sour cream or even salsa. Dress it up in whatever way you want!

Sweet Potato Breakfast Hash

A dairy-free and gluten-free breakfast hash made with sweet potatoes, bacon, kale, eggs plus other favorite add-ins. Perfect breakfast for any time of the year. 

  • 3-4 cups sweet potatoes, chopped into small cubes*
  • 1/2 pound bacon, sliced into small pieces
  • 1/2 onion onion, chopped
  • 1 clove garlic, minced
  • 1 tsp italian seasoning
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1 tsp salt
  • 1-1 1/2 cup kale, chopped
  • 1 tomato, chopped
  • 5 Tbsp water**
  • 3 eggs, cooked sunny-side up or scrambled***
  1. Cook bacon in a large sauté pan until fully cooked to desired texture. (If you like it crispy, then cook until crispy. If you like it softer, then cook it a little less.)

  2. Remove from pan. Here you can drain the grease from the pan and use a different oil (like EVOO, avocado, coconut, etc.) or leave the bacon grease. 

  3. Add sweet potatoes and water to pan (This helps to keep the potatoes from burning while cooking.). Cover with lid to help sweet potatoes to cook. Stirring frequently to prevent potatoes from burning. Cook until almost tender throughout.

  4. Then add in onions, italian seasoning, paprika, salt, and cumin. Stir. Cook until onions are transparent.

  5. Add garlic. Stir everything until well combined. Remove from heat. 

  6. Add in chopped tomatoes and kale. Combine everything together. 

  7. Top with eggs. Serve and enjoy! 

  8. Depending on if you’re dairy/gluten-free, you can serve it on a tortilla, add cheese, or other desired toppings! 

*The smaller the chopped potatoes the faster they will cook. 

**Water is added instead of oil here because it helps to prevent the dish from being too greasy. It also helps to cook the potatoes by creating a steaming effect using the lid to cover the pan.

***Here the eggs are cooked over easy/sunny-side up. But feel free to scramble them if you prefer that. Feel free to use more or less eggs depending on how many people you plan to serve.

Don’t they look a little like snow balls?

Well, I’m starting off the Nourishing Plates series with these yummy Homemade Orange Balls. Recipe courtesy is from my Grandma, who was kind to let me share it! These have become a favorite of some members of my family! And hopefully yours too, when you try them. Whenever we have them around, they get gone quick!

They are a sweet treat and so simple to make. They’re made with orange juice concentrate, crushed vanilla wafers, chopped nuts, melted butter, powdered sugar, and coconut. When I made these, I made nearly 36 balls. They stay in the freezer so they’re the great snack if you’re craving something sweet but don’t want to make an entire pan of dessert.

To make these Homemade Orange Balls, all you need to do is crush the vanilla wafers and then add in all the other ingredients minus the powdered sugar. Combine well. Roll into 1 inch balls (or larger or smaller depending on your preference). Then roll those balls in powdered sugar. Place in an airtight, freezer friendly container and store in the freezer until ready to serve.

Homemade Orange Balls

My Grandma’s recipe for delicious and simple homemade orange balls. 

  • 1 12oz package of vanilla wafers
  • 3/4 cup chopped nuts
  • 1/4 cup melted butter
  • 1 6 oz can frozen orange juice concentrate (thawed)
  • 1/2 cup shredded coconut (optional)
  • 1 cup powdered sugar
  1. Crush vanilla wafers in a large bag, bowl, or food processor. 

  2. Add chopped nuts, melted butter, orange juice concentrate, and coconut. Mix well to combine.

  3. Form into small balls. Roll in additional powdered sugar and freeze until ready to serve.

Guess it all stems from when my husband and I were able to read books together in the evening. You may be thinking “oh, that’s so cute, you read together” or “that’s weird, why would anyone do that?”. But it was really a sweet time. He read me the whole Harry Potter series which I had never read in its entirety. And I have to say it’s rather good. I won’t spoil it here for any of you who haven’t read them.

Ever since then, I’ve been on a reading kick. A small one. So I thought I’d share a few of my favorite books along with our favorite kids books that we have so far.

Mom Books

Treasuring Christ by Gloria Furman is a great book for mothers. I received this as a gift and really enjoyed reading it. Forman discusses doing life everyday as a mother but Treasuring Christ in all those moments even when mothers feel like those moments are mundane, tedious or tiresome. She reveals that Christ is with you always to uphold you and is ever so gracious, steadfast and loving.

The Magnolia Story by Chip and Joanna Gaines is a wonderful book for anyone who reads it. I have personally loved watching their show, Fixer Upper! They’re such a unique couple who God has blessed! The book is a biography of their life in how they met and how their life unfolded to what it is today. Both Chip and Joanna give great encouragement throughout their book to their readers encouraging them that they can achieve whatever they put their minds to with hard work. They give life lessons and always give credit to the Lord for everything He has done for them.

Kids Books

Little Blue Truck by Alice Schertle is a good book, especially for boys. Our son LOVES this book. It focuses on the importance of friendship. A little blue truck is friends with all the animals and when a bigger truck comes through, he blows everyone off to later realize friendship is important, especially in dirty situations.

Just Because You’re Mine by Sally Lloyd-Jones is such a sweet book! It talks about how the baby squirrel is loved not for his attributes but because simply because he belongs to his father.

Guess How Much I Love You by Sam McBratney is another precious book. It talks about how much love the Father Nutbrown Hare has for Little Nutbrown Hare. It’s not merely how high either can jump but how love knows no bounds.

Are You My Mother? by P.D. Eastman is a great book for children! Our son loves it mainly because there is a car, boat, and plane in the book. In this book, the baby bird is on a mission to find his mother. After a long journey of asking everyone he comes across, he finally finds his mother.

Green Eggs and Ham by Dr. Suess is a children’s classic. Our son also loves this book because there is a car, boat and train! It shows the importance of trying new things.

So, that’s our very short list of our favorite mom and kid books. If you decide to pick up a book, I hope you enjoy reading them as much as we did!

As I am reflecting on 2017, drinking a delicious cup of coffee (it seems to be one of my favorite afternoon things to do), I first want to thank each and every one of you who have been so faithful in trying some recipes, following me on social media, reading my blog posts, and just encouraging me every step of the way.

Y’all ARE great.

So looking back, there was a slow start to the year because I struggling during the first trimester of my second child. Food was not at all appetizing then so there were very few recipes posted during that time. If I’m honest, my diet consisted primarily of frozen sausage biscuits. Not at all healthy, but all I could keep down at that time. But we’re much better. Haven’t had a sausage biscuit since.

Once Spring rolled around I was able to start making more recipes and trying new things. Then we found that we were expecting a boy! How exciting?!?!

Summer quickly came and went. Our family did some traveling and got to see some friends and family, which was so refreshing! The end of Summer and Fall were some of the biggest growth for this little blog.

Also in Fall our baby boy arrived! So precious he was and still is.

Now it’s Winter! It feels as if the year has gone by so very fast.

I’m also starting a new series next year called Nourishing Plates where I feature one of your recipes every month. So excited to share your recipes and stories to show how food can nourish us in so many different ways. If you have one to share, send it my way! I can’t have too many recipes!

Everyday I am learning more and more about the blogging world. Learning more about food photography, recipe development, nutrition, cooking techniques, and so much more. So many different recipes I’ve made and more that I want to try! If you’re curious about what some of the Top Posts are for this blog, here are the top 3:

It’s that time of year again where Peppermint Mochas are in season! And although going to a local coffee shop is fun (definitely one of my favorite things to do!), you can make your own Homemade Peppermint Mocha right in your own home!

This can be dangerous though…because if you’re like me and love anything chocolate, you end up making chocolate things all the time. And then eating all of them. But chocolate is good for you, right? Packed with antioxidants?

I think so. So, I’m just going to keep eating it.

Now, this recipe isn’t dairy free…or really all that health conscious because let’s be real…sometimes you gotta just live a little, you know? It’s totally worth every delicious sip!

This Homemade Peppermint Mocha is similar to my Hot Cocoa recipe. It’s super easy to make and absolutely delicious to drink. Perfect holiday beverage to warm you up!

It’s made with cocoa powder, strong coffee (made with a good quality brand), heavy cream, milk, sugar, peppermint extract, and a dash of salt. It’s important to use both a good tasting cocoa powder and good quality coffee because it affects the flavor. I personally love the Trader Joe’s brand of cocoa powder. It’s very flavorful and not expensive. One of my favorite coffee brands is Counter Culture. I tend to get their medium to dark roasts but any coffee brand you like will work perfect. Just be sure to brew it strong. Follow the directions on your bag of coffee and maybe add just a tad more coffee when brewing. I used a Pour Over (affiliate link) when making coffee for this and it turned out lovely!

You can make this Peppermint Mocha a medium pot on your stove. Heat to medium heat and add cocoa powder, sugar, salt, milk, and heavy cream. Heat to a low simmer but do not boil. The cocoa powder and sugar should dissolve in the cream and milk. Then add in coffee. Remove from heat and stir in peppermint extract. Add more or less extract depending on how much you love peppermint.

Voila!

Homemade Peppermint Mocha

A simple yet creamy and delicious Homemade Peppermint Mocha perfect for the Winter Season!

  • 4 Tbsp cocoa powder
  • 1/4 cup sugar
  • 1 1/2 cup milk* (any kind is good)
  • 2/3 cup heavy cream
  • 1 dash salt
  • 1 cup strong coffee
  • 1/2 tsp peppermint extract**
  1. Heat a medium sauce pan to medium/medium high heat.

  2. Add in cocoa powder, sugar, milk, heavy cream, and salt. Stir together.

  3. Allow the mixture to heat but NOT boil. This should take about 5-7 minutes. It should not bubble but a slight simmer is okay. Cocoa powder, sugar and salt should be dissolved in this time.

  4. Pour in coffee and remove from heat.

  5. Stir in peppermint extract.

  6. Pour into your favorite coffee mugs and enjoy as is or top with whipped cream! 

*Any kind of milk can be used for this but whole milk definitely has the best flavor and creaminess. 

**Depending on how much you like peppermint, you may want to start off adding a 1/4 tsp of peppermint extract and tasting to see if that suits your taste buds. If you desire more peppermint flavor, then simply add the amount noted.

Nourishing Plates - A series on how food nourishes your body in more ways than one. Through plates or fellowship, food nourishes the soul. http://thelittlemomma.com

I want to make, photograph, and share YOUR favorite recipes. A lot of the food we eat often tells a story. Whether it shares a precious memory with a dear friend or family member or it’s a simple coffee to catch up with someone, the food you share with those around you nourishes you in many ways.

It’s more than just food on a plate. Food nourishes you physically through the nutrients you receive. It nourishes you emotionally and mentally through its taste and flavors and through your fellowship with others.

I’d love for you to send me your recipes. Your recipes can be anything. It doesn’t have to follow any food trends or even be all that healthy. So don’t you worry about being paleo/whole30 approved/allergen friendly. Maybe it’s your Papa’s Favorite Fried Taters recipes or your go to snack or meal. These recipes still nourish you in different ways.

My goal is to post these recipes once or twice a month in the Nourishing Plates series depending on how many recipes I receive. I’ll share your recipe (as your recipe) and be sure to tag you in them (if you’d like that). I can even share a story with the recipe on why it’s special if you have one. I’d just love to know what your favorite recipes are and share them with others!

Mmmmm…delicious! And you can’t taste the greens! Win win, right?

Currently, our toddler isn’t too keen on eating his vegetables. But don’t worry. We ARE working on it. But it’s a slooowww process. He LOVES his meat and fruits. Which is a great thing but we have to get in those vegetables too! So, in the mean time, we are making smoothies with lots of spinach. Getting in that serving of greens and those essential vitamins and minerals that darker greens contain. You’re getting magnesium, iron, folate, vitamins B, K, E, and A, calcium, potassium and much more. These help with blood, inflammation, bone, and skin health, just to name a few. Let’s be sure to consume your servings on greens everyday!

This Banana Apple Green Smoothie takes little time to make. Gather up some bananas, spinach, apple juice (Note: You will want to use high quality apple juice. 100% juice. Simply Apple has a great one that I use.), flax seed, chia seed, and a little squeeze of lemon juice.

Blend all  ingredients together until smooth.

If you’ve never used flax seed or chia seeds in a smoothie before, you should know that it does affect the texture. It can cause it to have more of an “egg-like” texture. Not gross, but important to know. The longer you let the smoothie sit, the more egg-like in texture it will be. Fun fact – Flax Seed is a great substitute for eggs if you’re vegan! You just mix 1 Tbsp flax seed with 3 Tbsps water and allow to sit until thick.

Banana Apple Green Smoothie

A green smoothie featuring bananas, apple juice, flax seed, chia seed, and spinach. Delicious yet healthy!

  • 2 ripe bananas
  • 1 cup spinach
  • 2 Tbsp ground flax seed
  • 1 Tbsp chia seeds
  • 3/4 cup 100% apple juice
  1. Add all ingredient to blender and blend until smoothie.

  2. Serve and enjoy!

If you’ve never used flax seed or chia seeds in a smoothie before, you should know that it does affect the texture. It can cause it to have more of an “egg-like” texture. The longer you let the smoothie sit, the more egg-like in texture it will be.

As you can tell, I really LOVE to cook soups. The cooler weather is finally settling in where we live, so I’m cooking all the soups. This creamy Chicken Rice Soup is heart warming, delicious, and dairy free.

How to make soups creamy without using dairy? Well… there are a few different options. You can use coconut milk (sometimes this can give a slight coconut flavor, which may or may not work for your dish depending on its flavors), cashews (blended up, of course. Cashews also provide a lot of calcium so you’ll getting your calcium this way), then there’s another way I just discovered – blended beans.

You may be skeptical but you can’t really even taste them in there!

I used white beans (either cannellini or great northern beans) and you blend them up and add them to your soup! I added a tablespoon of cornstarch because I like my soups to be thick too. It’s another way to add extra protein to your soup which helps to keep you fuller longer.

I’m all about easy to make meals and this Creamy Chicken Rice Soup is one of my favorite go-tos. Plus, you can easily make more if you’re feeding a crowd. All you need are: carrots, celery, onions, garlic, seasonings, rice (any kind – wild, white, brown, jasmine, etc.), extra virgin olive oil, broth, chicken, beans, corn starch, and a bit of salt and pepper. This is another soup that I make in my Dutch Oven (affiliate link).

In your dutch oven or large pot, heat to medium heat add EVOO. Then add chopped carrots, celery and onion. Sauté until onions are transparent and other vegetables are soft. Add garlic and seasonings and cook until fragrant, about 1-2 minutes. Stir in rice. Then add broth, and a pinch of salt and pepper. Cook soup until rice is fully cooked.

Remove 1/2 cup of soup liquid and pour into blender. Add in beans (which have been drained and rinsed) and cornstarch and blend just until smooth. Pour back into soup. Let cook for a few minutes. Then serve!

Creamy Chicken Rice Soup

Healthier and delicious comfort bowl of soup. Dairy free. Featuring vegetables, rice, seasonings, beans, broth, and chicken.

  • 2 whole carrots, chopped
  • 1 stalk celery, chopped
  • 1/2 onion, chopped
  • 1 heavy pinch salt
  • 1 heavy pinch pepper
  • 2 tbsps olive oil
  • 2 cloves garlic, minced
  • 3/4 cup rice (white, wild, brown or your favorite)
  • 6 cups broth (any kind will do)*
  • 1 1/2 tsps Italian Seasoning
  • 3/4 tsp garlic salt
  • 1 Tbsp corn starch
  • 1 15oz can white beans (cannellini or great northern beans), drained and rinsed
  • 1 1/2 cups shredded cooked chicken (rotisserie or leftover chicken works well)
  1. Heat a dutch oven or large pot to medium to medium high heat. 

  2. Add in olive oil, chopped carrots, celery, and onion. Cook until onions are transparent.

  3. Add in garlic and cook until fragrant. About 1-2 minutes.

  4. Add in Italian Seasoning, garlic salt, salt, and pepper and rice. Stir until everything is well combined.

  5. Add in broth. (Note: Some rices will require more liquid to cook so if you see that you need to add more broth or water, please do.) Bring to a boil.

  6. Reduce to a simmer and cook for 30 minutes or until rice is fully cooked. Stir occasionally. (Note: Some rices will need more time to cook. Ex: A wild rice blend can take almost 40 minutes to be fully cooked.)

  7. In a blender, add 1/2 cup soup liquid, white beans, and corn starch. Blend until smooth.

  8. Add shredded chicken. Pour blended bean and soup mixture into soup. Allow to cook for a few minutes. Season to taste.

  9. Serve and enjoy! 

*You may have to add more liquid depending on the type of rice you use. Check soup consistency when stirring. If it seems too thick add more broth.

 A friend of mine made it and I have become a little obsessed. It’s SO yummy and my little one even loves it!

My husband and I were thinking of something to make for my son’s upcoming birthday. He likes sweets, but he never finishes a cookie, a piece of cake or a cupcake. (whhaaaat?…)

So we have been thinking, what should we make that he’d want to eat? Not that he’ll actually remember this birthday because he’s turning 2…but still, you have to celebrate your birthday eating something delicious! So we decided to make a side of this sweet potato bread for him and, of course, a mini cake for everyone else!

This bread can be made in one bowl. Easy. And did I mention less dishes? Win for everyone.

All you need are sweet potatoes (cooked), coconut oil, pure vanilla extract, eggs, sugar (optional if you want to have no refined sugar), maple syrup, cinnamon, flour, baking soda and a pinch of salt.

How to Cook Sweet Potatoes (just in case you need this):

Cooking sweet potatoes is simple. Pierce all around the potato with a fork. Cook at 400 degrees F for 1 hour. Pierce with fork to see if tender throughout. If not cook for longer. Remove from oven when done and allow to cool. Once cooled, remove the “meat” of the potato into a bowl.

In a large bowl, mash up cooked sweet potatoes. Mix together with coconut oil, sugar, and maple syrup. Then add pure vanilla extract, eggs, and cinnamon. Add in flour(s) (I used both all purpose and whole wheat flour because I like the taste. Plus, using whole wheat flour helps to cut down on sweetness and adds a tab bit more fiber.), baking soda and salt. Mix until just combined.

Pour into a greased 9×5 baking dish. Cook in preheated 350 degrees F oven for about 30 minutes. More time may be need depending on your oven. Be sure to make sure a toothpick comes out clean when inserted.

This delicious Sweet Potato Bread is best when served warm. But really any temperature is yummy! Enjoy as is or with a drizzle of maple syrup, honey, or even some peanut butter. Simple, delicious and a healthier snack!

Sweet Potato Bread

A healthier sweet and tasty bread. Perfect for breakfast, snack or dessert. 

  • 2 cups sweet potatoes, cooked and mashed*
  • 1/4 cup sugar**
  • 1/4 cup maple syrup
  • 1/3 cup coconut oil
  • 2 eggs, beaten
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp pure vanilla extract
  • 1 pinch salt
  • 1 tsp baking soda
  • 3/4 cup all purpose flour
  • 1/2 cup whole wheat flour
  1. Preheat oven to 350 degrees F. 

  2. In a large bowl, mix together mashed sweet potatoes, coconut oil, sugar, and maple syrup. 

  3. Stir in eggs, vanilla extract, and cinnamon.

  4. Add in flours, baking soda, and salt. Mix together until just combined.

  5. Pour into a greased 9×5 inch baking pan. 

  6. Bake for 30 minutes or until a toothpick comes out clean when inserted. (Cooking times may vary depending on type of oven.)

* 2 cups sweet potatoes = about 3 small to medium size sweet potatoes

**Maple syrup can be used in place of sugar if desired.

Soups and stews are such a comfort food when cooler weather arrives. And a good hearty stew like this Italian Sausage Vegetable Bean Stew is one of my favorite go-tos. It’s delicious, savory,  and hearty and just makes your heart happy and your belly glad!

It doesn’t take too long to make. This is not your ordinary soup with tons of broth and a small amount of vegetables. No, friends, this soup is packed with protein, vegetables, and all around yumminess.

Easily add more vegetables or beans or other sources of protein if you have them in your pantry or fridge. There’s no wrong way to go about this.

I made this using my dutch oven. You can use a crock pot but it won’t have the same depth of flavor. If you don’t have a dutch oven, I highly recommend getting one. Super great to make stews and soups in.

So in your dutch oven, brown up some Italian sausage (my husband loves this meat!). Then as the meat is browning add in the chopped onions and extra virgin olive oil. Sauté everything together until onions are transparent. Add in garlic and cook for 1 minute. After that pour in broth. Next, add chopped carrots, celery, and potatoes, Italian seasoning, salt and pepper. Let it simmer for about 20 to 25 minutes. Making sure that the vegetables are soft when pierced.

Towards the end of cooking, add in beans and chopped kale. Add more seasoning to taste.

Italian Sausage Vegetable Bean Stew

A hearty stew filled with Italian sausage, vegetables, beans and seasonings. 

  • 6 cups broth (any kind will do, but our favorite to use is chicken)
  • 1/2 pound Italian sausage
  • 3 Tbsp extra virgin olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 whole carrots, roughly chopped
  • 3 cups red potatoes, chopped into bite size pieces
  • 1 stalk celery, chopped
  • 1 1/2 tsps Italian seasoning
  • 3 cups kale, chopped into small pieces
  • 2 cans white beans (any kind of white bean is good)
  • 1 pinch black pepper
  • 1 heavy pinch salt
  1. Heat a dutch oven over medium to medium high heat.

  2. Add Italian sausage and brown. As it is browning, break up into smaller pieces.

  3. Once the sausage starts to brown, add in onions and extra virgin olive oil. Cook until sausage is fully cooked and onions are transparent.

  4. Add in garlic and cook for an additional minute.

  5. Pour in broth. Add in carrots, potatoes, celery, Italian seasoning, salt and pepper. 

  6. Cover and simmer for 20-25 minutes or until vegetables are tender when pierced.

  7. Turn to low heat. Stir in beans and kale. Let sit for about 3 minutes. Season to taste.

  8. Serve and enjoy! Add your favorite hearty bread or sandwich if desired!
