Easy Chocolate Peanut Butter No-Bake cookies are some of our all time FAVORITE cookies!
Because there is no baking involved and they’re made all in one bowl! Chocolate and peanut butter are truly a match made in heaven. Yummy cookies and easy clean up for the win! These are a great go-to if you’re craving something sweet. And if you’re trying to control how many sweets you eat, this recipe can be easily halved…or doubled…
Making these cookies is SO simple. You need cocoa powder, sugar (both granulated and brown), butter, milk, vanilla extract, peanut butter, and oats. I use brown sugar in addition to the granulated sugar because it adds a deeper, slightly caramel like flavor. In a medium pot, mix together cocoa powder, sugars, butter and milk. Bring this to a rolling boil. Let boil for at least 1.5 minutes. This is VERY important. This helps to give the cookies a beautiful texture and a wonderful taste. Once it’s been about 1.5 minutes, remove from heat. Add peanut butter and vanilla extract until combined. Then fold in oats.
After everything is combined, spoon heaping spoonfuls of mixture onto parchment paper or a cookie sheet and allow to cool. Be careful not to eat all the mixture before you form it into cookies. It’s super tempting! If you’re really impatient, (like myself) you can stick these in the freezer for about 10 minutes. But if you’re willing to wait, allow these to cool in the fridge for 30 minutes or on the counter for an hour. Cookies will be firm once done.
Pour yourself a glass of milk or cup of coffee and enjoy one or two (or more) of these easy chocolate peanut butter no-bake cookies. You won’t be disappointed!
Easy Chocolate Peanut Butter No-Bake Cookies
A favorite cookie in our home. So easy to make with little clean up. These cookies will not disappoint!
- 1/2 cup butter, stick
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, lightly packed
- 1/2 cup milk
- 4 Tbsps cocoa powder
- 1/3 cup creamy peanut butter
- 2 tsp pure vanilla extract
- 3-3 1/2 cups Old-Fashioned Rolled Oats
In a medium pot over medium high heat, mix together butter, sugars, milk, and cocoa powder.
Bring ingredients to a rolling boil. Allow to boil for AT LEAST 1.5 minutes.
Remove from heat.
Add peanut butter and vanilla extract.
Fold in oats.
Spoon heaping spoonfuls of mixture onto parchment paper or a cookie sheet.
Put in freezer for 10 minutes, in fridge for 30 minutes, or on counter for 1 hour. Enjoy!
