Fall is slowly coming! I don’t know about you, but where we live, it is still Summer in full force. I keep seeing all theses recipes for soups, baked goods, apples, and pumpkin galore! You can almost smell them in your house! It makes me just want to make them all even though it’s 90 degrees out. Oh well! Today I have a super simple Crock Pot Quinoa Vegetable Chicken Soup. Just throw all the ingredients into your crock pot and let it do ALL the work. Isn’t that amazing?!?! I think so. Especially if you have kids. No hot burners or ovens to worry about here.
We are changing up your average Chicken Soup dish with quinoa. Quinoa is a healthier grain that can be used in so many dishes. Dessert, salads, soups, burgers, casseroles, baby food, and the list could go on. It’s slightly higher protein and fat content are reasons why it’s becoming a popular grain substitute in many dishes. Give it try and see how you like it! There are a few different varieties which can be found in your local grocery store.
For this soup, get out that crock pot! If you haven’t been using it, then you’ll be sure to use it more after making this dish and realizing how convenient it is! You want to add diced onions, frozen mixed vegetables, chicken (frozen or fresh, either will do), quinoa (rinsed and drained), italian seasoning, oregano, chicken stock, water, and a little salt and pepper to taste. Let it cook for about 4-6 hours on low or 2-3 hours on how. Always be sure to check the chicken before serving to ensure it’s thoroughly cooked. Just before serving, remove chicken and shred into small pieces and return to pot. Serve with your favorite toppings and sides.

Crock Pot Quinoa Vegetable Chicken Soup
- 1 pound chicken breasts
- 1 cup uncooked quinoa
- 3 cups mixed frozen vegetables
- 3 cups chicken or vegetable broth
- 4 cups water
- 2 Tbsps italian seasoning
- 2 tsps oregano
- 1/2 tsp salt
- 1/2 tsp pepper
In a crock pot, add chicken, quinoa, frozen vegetables, broth, water, seasonings, salt and pepper.
Cook on high for 3-4 hours or low for 4-6 hours. (Be sure to check chicken to make sure it's cooked all the way through.)
Once done, remove chicken breasts and shred to bite size pieces. Return to crock pot.
Serve with desired toppings and sides and enjoy!
