Chocolate Almond Bark Thins are becoming my new favorite snack. Literally made with 2 ingredients. Can it get much easier?!
Almonds + dark chocolate. YUMMMM!!! Match made in heaven.
These are SO simple to make and taste almost like those Bark Thins that you would find in your local grocery store. Grab your favorite chocolate and some dry roasted, lightly salted almonds and you’re good to go.
My personal favorite chocolate to use is bittersweet. I think it gives these bark thins the perfect dark chocolate taste without being too bitter. Of course, if you like darker or milk chocolate, feel free to use that instead. I must add that higher quality chocolate will make a difference in taste. So use a chocolate that you enjoy eating on its own. Here, I used Ghirardelli chocolate.
Alright, let’s get to the recipe.
First you’ll want to melt your chocolate. I used the double broiler method when I made these. But you can use your microwave or heat directly over the stove if that works better for you. Next, add in crushed almonds and stir together. Then pour mixture onto a 9×13″ pan covered with parchment paper. Spread very thin. Place in freezer for at least 30 minutes and voila! You have chocolate almond bark thins! Sprinkle a little bit of sea salt on top to get a little extra of that sweet and salty combo.
As I was photographing these guys (the first time I made them… which was with cocoa powder instead of baking chocolate that’s why the texture is different), my little one decided to give them a taste test. Needless to say, he liked them! His chocolate covered face and hands said it all. Pretty sure we nearly devoured the whole pan in that photo shoot.
This recipe is easily altered too. You can use pretzels, other nuts, or dried fruits instead of almonds. And if you don’t have baking chocolate on hand, cocoa powder and butter/coconut oil will also do but it will not result in as good of flavor or texture as using baking chocolate.
We love having healthier snacks around our house because our sweet teeth can sometimes be out of control. Luckily, these bark thins and some of our other favorite snacks (peanut butter chocolate energy bars, and our mixed berry oatmeal crisp) help curb our sweet teeth in a more healthyish direction.

Chocolate Almond Bark Thins
A perfect, simple snack made with dark chocolate and almonds.
- 8 oz bittersweet baking chocolate*, chopped
- 1/2 cup almonds, lightly chopped
- 1 tsp sea salt (optional)
Using a double broiler melt chocolate. (To do this: In a medium pot over medium high heat, add about 1 inch of water to boil. Place a bowl on top. Add in coarsely chopped chocolate. Stir chocolate frequently to ensure all chocolate melts. Once all chocolate is melted, remove bowl from pot and set aside.)
Add in chopped almonds and stir.
Pour onto a 9x13 inch pan covered with parchment paper. Spread mixture thinly.
Place in freezer for at least 30 minutes.
Remove and cut into desired size pieces. Enjoy!
*If you don't have baking chocolate on hand, you can use cocoa powder and butter instead. You would heat together 1/2 cup cocoa powder, 1/2 cup butter, 1/4 cup sugar, and 1/2 tsp vanilla extract instead. Then add in the almonds. The texture and taste won't be the same as using baking chocolate but will still taste delicious!
