Happy Monday! It’s the first day of summer! That should make Monday a little brighter! I love weekends, and I have to say Sundays are my favorite day of the week. I go to church, spend time with my family and just enjoy the blessed day. Over the weekend we did some traveling. And if you have little ones (or perhaps pets), you know that’s not always easy. I cannot tell you how many times I was in the back seat of our car, while a family member was driving, reading a Dr. Seuss book over and over again just so my little guy wouldn’t lose it in the car. Good times… I’ve almost memorized that entire book now… But still, I am so thankful for that little man.
Well when we got back from traveling I noticed the avocados I had out on our table were getting a little too ripe. So this afternoon I made cheese avocado toast.
Oh, it hit the spot! Creamy and perfect for an afternoon snack. Best thing- it only took 15 minutes to make.
If you have a toaster and an oven, or even a toaster oven, this is the perfect dish for you! To begin, toast a slice or two of your favorite bread, add sliced avocado, then cheddar cheese. Bake in the oven until cheese is melted and bubbly. Sprinkle on some black pepper or maybe some crushed red pepper flakes (if you like spice) and call it done!
Cheesy Avocado Toast
- 1/2 avocado sliced
- 1/2 cup cheese shredded
- 1 slice of bread toasted
- pinch black pepper to taste
Preheat oven to 400F.
On toasted bread, add avocado and top with cheese. Put on baking sheet.
Bake in oven for 10 minutes, so cheese is melted and bubbly.
Serve warm and enjoy!
