Fall is slowly coming! I don’t know about you, but where we live, it is still Summer in full force. I keep seeing all theses recipes for soups, baked goods, apples, and pumpkin galore! You can almost smell them in your house! It makes me just want to make them all even though it’s 90 degrees out. Oh well! Today I have a super simple Crock Pot Quinoa Vegetable Chicken Soup. Just throw all the ingredients into your crock pot and let it do ALL the work. Isn’t that amazing?!?! I think so. Especially if you have kids. No hot burners or ovens to worry about here.
I’m a little obsessed with Mexican food but you probably already knew that. It’s just so good! Well friends, today I have for you an Enchilada Bake. It’s not your average baked enchiladas but more like deconstructed enchiladas. But in casserole form. Doesn’t that sound so yummy and fun?
Cinnamon Maple Peanut Butter Toast.

This is seriously one of the best ways to eat toast. Whether you’re looking for a quick breakfast or a pre/post workout snack, this Cinnamon Maple Peanut Butter Toast will hit the spot.
You can make this with ingredients that you probably already have in your pantry. All you need is bread, peanut butter (or your favorite nut butter), maple syrup and cinnamon. Start breaking out that cinnamon because it’s going to be needed with Fall just around the corner! Can’t you smell the pumpkin pie or apple cider coming from your kitchen right now?! Or breathe the crisp cool breeze of the Fall air? Can you believe that Fall is already almost here? This year has flown by. Just try and savor those sweet moments.
For those who are gluten free, you can use gluten free bread and it will be delicious. Mix together peanut butter, syrup and cinnamon in a small bowl to make your spread. Once it’s mixed, spread on top of your piece of toast. You may need to make more depending on how much spread you want to have!
You can add any kind of topping to add a little bit of crunch or extra flavor too. Bananas, chocolate chips, nuts, granola, or dried fruit are great options to add!

Cinnamon Maple Peanut Butter Toast
Easy breakfast or pre/post workout snack made with only 4 ingredients. Perfect for a little extra protein to give a boost of energy.

Servings 2 slices of toast
of your favorite bread
peanut butter or other nut butter
or more depending on how much you like cinnamon
Toast slices of bread.
In a small bowl, mix together peanut butter, maple syrup, and cinnamon.
Spread mixture on top of toast.
Drizzle with syrup and enjoy! You can add other toppings like nuts, bananas, granola or whatever else you may have on hand.

If you asked my a few years ago to eat this pizza, I wouldn’t have wanted to because it wasn’t real pizza (and by real I mean pepperoni). I hated chopped tomatoes on my pizza. But as I get older, I learn to like things I didn’t. Crazy how that works, isn’t it?

Let’s talk oatmeal. Oatmeal is one of the healthier options when it comes to breakfast. It gives you a lot of fiber, it’s heart healthy, and you can do so much with it. You can put almost any type of topping you want to give it any kind of flavor you want. From chocolate chip cookie dough, cinnamon rolls, PB & J, to peach or tiramisu, you name it, and there’s probably a recipe out there.
Chicken Apple Stuffed Quesadillas. Not your everyday quesadilla, right? I love me some quesadillas. These are great because they have all kinds of yummy vegetables in them. This recipe is similar to my chicken enchiladas just cooked and served a little differently. Eating quesadillas are a great way to incorporate vegetables because you have cheese to make them taste better. What’s not to love?!
As a momma, it’s hard to always find something quick to make for a snack before my little one decides to go venture somewhere he’s not supposed to. Even if I have barriers set up, he somehow finds a way to get around them! I’m not really a huge snacker but I do think it’s great for your metabolism to have a few small healthy snacks throughout the day, especially if you’re active. Plus, sometimes you just need that little extra energy to make it through until the next meal. That’s why I made these frozen yogurt and blueberry granola bites.
