Happy Monday! Hope you started off your week with a delicious breakfast and a good strong cup of joe!
Today I have a Basic Homemade Granola recipe for you! It’s super easy to make. You can make it with everyday ingredients from your pantry. Can I tell you how many times I have made this granola and have failed!?! I burnt several batches and others tasted terrible. But after several attempts and many days of eating burnt granola, I have finally found the key! The key, my friends, to good granola is LOW oven temperatures and SLOW roasting. 250F seems to be great temperature for granola making. No 425F here. Otherwise, you will end up with blackened granola, which isn’t good.
Fall is slowly coming! I don’t know about you, but where we live, it is still Summer in full force. I keep seeing all theses recipes for soups, baked goods, apples, and pumpkin galore! You can almost smell them in your house! It makes me just want to make them all even though it’s 90 degrees out. Oh well! Today I have a super simple Crock Pot Quinoa Vegetable Chicken Soup. Just throw all the ingredients into your crock pot and let it do ALL the work. Isn’t that amazing?!?! I think so. Especially if you have kids. No hot burners or ovens to worry about here.
I’m a little obsessed with Mexican food but you probably already knew that. It’s just so good! Well friends, today I have for you an Enchilada Bake. It’s not your average baked enchiladas but more like deconstructed enchiladas. But in casserole form. Doesn’t that sound so yummy and fun?
Cinnamon Maple Peanut Butter Toast.
Your everyday toast taken to the next level.
This is seriously one of the best ways to eat toast. Whether you’re looking for a quick breakfast or a pre/post workout snack, this Cinnamon Maple Peanut Butter Toast will hit the spot.
You can make this with ingredients that you probably already have in your pantry. All you need is bread, peanut butter (or your favorite nut butter), maple syrup and cinnamon. Start breaking out that cinnamon because it’s going to be needed with Fall just around the corner! Can’t you smell the pumpkin pie or apple cider coming from your kitchen right now?! Or breathe the crisp cool breeze of the Fall air? Can you believe that Fall is already almost here? This year has flown by. Just try and savor those sweet moments.
For those who are gluten free, you can use gluten free bread and it will be delicious. Mix together peanut butter, syrup and cinnamon in a small bowl to make your spread. Once it’s mixed, spread on top of your piece of toast. You may need to make more depending on how much spread you want to have!
You can add any kind of topping to add a little bit of crunch or extra flavor too. Bananas, chocolate chips, nuts, granola, or dried fruit are great options to add!
A perfect, no-guilt way to snack, which is the best way to snack if you ask me. Hope you enjoy this Cinnamon Maple Peanut Butter Toast with a good cup of coffee, smoothie, or maybe some fruit. Enjoy these last few weeks of Summer then break out those fall sweaters and boots!

Cocoa Peanut Butter Energy Balls are a healthy and delicious snack to have around the house. The protein from the peanut butter helps to give your body protein so the muscles can continue to build, strengthen, and maintain. And they also have healthy fats from the added ground flax seed. These no-bake energy balls only need 6 ingredients – oats, maple syrup or honey, cocoa powder, peanut butter, flax seed, and vanilla extract. So simple, right?! If you have kids, these are a yummy snack for them too. Plus, you won’t have to worry about cleaning up after, which is a wonderful thing.
Pancakes. Who doesn’t love pancakes? They are one of my husband’s FAVORITE breakfasts. He could eat them all the time. These whole wheat pancakes, are fluffy, dense, and a bit healthier for you too. Best thing about them, you only need ONE bowl. I’m all about that easy clean up.
Pesto Tomato Cheese Pizza. For me, it’s a healthier pizza that I don’t feel guilty for eating. It’s not greasy and it’s super delicious. My husband even loves this pizza!
If you asked my a few years ago to eat this pizza, I wouldn’t have wanted to because it wasn’t real pizza (and by real I mean pepperoni). I hated chopped tomatoes on my pizza. But as I get older, I learn to like things I didn’t. Crazy how that works, isn’t it?
This pizza is super easy to make.
It’s chocolate chip cookie day!
But isn’t that every day? I just love chocolate. And chocolate chip cookies with a strong cup of black coffee… Mmmmmm, so delightful. It’s the simple things that keep life going.
Happy Wednesday to you from my oatmeal bowl!
Let’s talk oatmeal. Oatmeal is one of the healthier options when it comes to breakfast. It gives you a lot of fiber, it’s heart healthy, and you can do so much with it. You can put almost any type of topping you want to give it any kind of flavor you want. From chocolate chip cookie dough, cinnamon rolls, PB & J, to peach or tiramisu, you name it, and there’s probably a recipe out there.
