I love breakfast food. When I get up in the morning, I’m one of those crazy people who immediately thinks of what I can eat. A lot of times I eat eggs for breakfast but today, I thought I’d change it up a bit and have a blueberry and orange granola yogurt parfait too. You can make a parfait with any kind of fruit but blueberries and oranges are in season and are what I have on hand.
Now greek yogurt has recently become the “in” thing because it’s higher in protein and has a little less sugar that your regular yogurt brands. And many people don’t like it. But, friends, if you don’t like greek yogurt, you should give this parfait a shot. I mean, who doesn’t like parfaits? The sweetness of the red oranges pairs so well with the tartness of the greek yogurt and the granola adds that prefect amount of crunch to keep things from being too mushy. Blueberry Orange Greek Yogurt Parfait
- 3/4 cup vanilla greek yogurt
- 1/4 cup blueberries
- 1 red orange sliced into bit sized pieces
- 2 Tbsp granola (more or less depending on how much crunch you like)
In a small bowl, make a layer of greek yogurt at the bottom. Sprinkle granola on top of yogurt followed by blueberries and oranges. Mix together if desired. Enjoy!
*You can find red oranges in the produce section with regular navel oranges. They look the same as navel oranges so you have to look at the signs. A good brand are the cara cara oranges.
